In the method described, the potatoes undergo a rough reduction in size (chopping) prior to sorting by optical means. After said optical sorting, no further cleaning takes place. In this way, the rough reduction in size with optical sorting can take place immediately after peeling of the raw potatoes, or be postponed until the potatoes have been boiled and cooled. Also described is an extrusion system for finely comminuting the boiled potatoes when cold, said system comprising an extrusion and scraper plate (10), with extrusion blades (13, 14 and 15), which co-operates with a perforated disc (5). |
