PURPOSE:To provide a treating or storing method for suppressing or stopping fermentation of a brewed substance without killing yeast due to heat treatment. CONSTITUTION:This method for treating a brewed substance comprises arranging a grounding electrode 3C and a pair of applied electrodes 3A and 3B in a brewed substance such as SAKE (Japanese rice wine), wine, soy sauce, MISO (fermented soybean paste) to be treated and lowering oxidation.reduction potential by energizing high-frequency alternating current voltage to applied electrodes 3A and 3B to suppress or stop fermentation without killing a yeast due to applying heat treatment. |
