Process for fractionating and draining olive pulp. The process has special application in the oil industry, specifically in the industry dedicated to the extraction of olive oil, and is designed to separate pulp continuously from two phases into four different fractions based on a first separation of pips from the pulp by desegregation-homogenization of the diluted pulp, followed by settling, obtaining a first pip fraction which is separated for any purpose. The pip-free diluted pulp obtained from this first stage is centrifuged thus producing an oil-free drained pulp, and finally yielding a fourth liquid fraction of diluent.
