摘要 PURPOSE:To provide a cooked rice improving agent containing a protease, beta-amylase and starch and capable of improving the taste of cooked rice produced from rice of old crop having low quality, blend of hard rice and soft rice or exclusively hard rice. CONSTITUTION:This cooked rice improving agent contains a protease, a beta-amylase (preferably both of them have white color and low odor) and a starch (preferably glutinous rice flour or starch of dog tooth violet). The amount of the beta-amylase is preferably 15-50 pts.wt. based on 100 pts.wt. of the protease and that of the starch is preferably 100-500 pts.wt. for glutinous rice flour and 30-200 pts.wt. for starch of dog tooth violet. Rice is cooked together with the improving agent. The amount of the improving agent is preferably 0.1-1.5wt.% based on the rice.
