A paper web (12) in a paper machine including a yankee dryer (10) is dried and the moisture profile thereof controlled by arraying a plurality of gas burners (30) in a cross-machine direction within the hood (16) of the yankee dryer to direct heat toward different incremental width portions (23) of the paper web. The burners (30) are independently controlled by a scanning moisture gauge (60).
