PURPOSE:To produce a fresh and delicious ASAZUKE (a fresh vegetable pickled with salt and a seasoning) in a short time. CONSTITUTION:A method for producing an ASAZUKE comprises charging vegetables 4 cut into proper sizes and approximately 6wt.% of salt 7 into a stirring container 12 extended in the longitudinal direction and equipped with plural raising tools 13, rotating the stirring container 12 at an approximately one rotation per second for approximately 5min for stirring the vegetables 4 and the salt 7 to preliminarily pickle the vegetables, washing the preliminarily pickled vegetables with water, again charging the washed vegetables 4 and a seasoning solution 5 into the container 12, and subsequently rotating the container 12 at an approximately one rotation per second for approximately 5min for stirring the preliminarily pickled vegetables 4 and the seasoning solution 5 to season the vegetables 4. |
