PURPOSE:To produce a grated radish prevented in the discoloration over a long period above a week by separating a grated radish into a solid content portion and an aqueous solution portion, removing a prescribed amount of the aqueous solution, adding an emulsifier for foods to the residual aqueous solution portion, mixing the mixture with the solid content portion, and subsequently subjecting the mixture to a sterilizing treatment under specific conditions. CONSTITUTION:A method for producing a grated radish comprises separating a grated radish into a solid content portion and an aqueous solution portion, removing a prescribed amount of the aqueous solution portion, adding an emulsifier for foods to the residual aqueous solution portion, mixing the mixture to the solid content, sterilizing the mixture at 65-85 deg.C for a prescribed time, holding the sterilized mixture at ordinary temperature for 10-36hrs, and further sterilizing the treated mixture at 65-85C for a prescribed time. Thus, the grated radish held in the water content at a constant a higher level, capable of eliminating noncomformity when dished, and good in preservability is obtained. |
