PURPOSE:To obtain a process for the preparation of rice cake causing little dissolution in hot water in the case of using the rice cake under a high- temperature or prolonged heating condition. CONSTITUTION:This process for the preparation of rice cake causing little dissolution in hot water comprises the preparation of a rice cake by conventional process, the application of pressure of >=5MPa to the rice cake at 50-100 deg.C for about 10min and the release of the pressure. |
