PURPOSE:To provide a production method of dried sweat potatoes capable of producing dried sweat potatoes having extremely excellent taste through out a year and exhibiting improved workability and to obtain dried sweat potatoes having high marketability. CONSTITUTION:This production method comprises a washing process 1 for washing sweat potatoes, a steaming process 3 for steaming the washed sweat potatoes with steam, a freezing process 4 for freezing the steamed sweat potatoes, a process 5 in which the frozen sweat potatoes are brought to the state having elasticity, a surface softening process 6 in which only the surfaces are made soft in the sweat potatoes having elasticity, a skin removing process 7 in which the skins of the potatoes obtained in the previous softening process are removed, a cutting process 8 for cutting the skin-removed sweat potatoes and a drying process 9 for drying the cut pieces of the sweat potatoes. |
