PURPOSE:To obtain sauce packed in a hermetic container containing fruit vegetable of the family Cucurbitaceae as a solid ingredient, having pH of a liquid part in a specific range, sterilized by heating, having highgrade sense, excellent in keeping quality and taste and useful for pasta cooking, etc. CONSTITUTION:This cause packed in a hermetic container contains fruit vegetable of the family Cucurbitaceae such as zucchini as a solid ingredient and a pH valve of liquid part of the sauce is 4.5-5.6 and the sauce is heat-sterilized. The fruit vegetable of the family Cucurbitaceae is preferably zucchini and only vegetable solid ingredient is used and mineral content of the liquid part is <=0.1% and the pH valve of the liquid part is 4.8-5.2. The vegetable sauce packed in the hermetic container is obtained by sterilizing the sauce by pressurizing and heating. |
