PURPOSE:To obtain a preparation apparatus for NATTO(fermented soybean) capable of almost uniformizing the quality of steamed soybeans treated in large quantity at a time in a fermentation chamber. CONSTITUTION:A plurality of independently controllable heating and cooling apparatuses 4 are linearly arranged on the ceiling of a fermentation chamber 2 for holding steamed soybean inoculated with Bacillus natto. Plural temperature sensors are arranged in the fermentation chamber. Each heating and cooling apparatus 4 is independently controlled based on the measured result of at least one temperature sensor positioned near the heating and cooling apparatus. |
