PURPOSE: To extremely easily provide a food having tasting characteristics, quality and preserving characteristics similar to mousse, which is provided through a conventional method by a skilled person, through a specified method with puree, gelatine and cream as raw materials. CONSTITUTION: When producing the mousse-state food such as a mousse-state fruit based on puree, gelatine and cream first of all, a component (A) composed of gelatine precisely distributing additives (suitably the power of lactic protein or plant protein) is mixed with puree (B) (suitably composed of fruits ground, sieved and added with sugar later). Next, a component (C) mainly containing the mixture of gelatine and emulsifier is mixed with this mixture, afterwards, a component (D) based on cream is added to this mixture, and it is processed by a mixer. In this case, it is preferable that the component C contains the emulsifier in 25 to 35 wt.%. Further, it is preferable that the components A and B are mixed through the method of mixing in the mixer. |
