PREPARATION OF FRIED FOOD AND APPARATUS THEREFOR

PURPOSE:To uniformize the amount of oil and fat supplied to a food container and enable the preparation of a high-quality cooked product. CONSTITUTION:This fried food preparation apparatus is provided a treating tank 1 having an inlet and outlet port at a side wall and air-tightly closable by closing the inlet and outlet port with a cover 3, shallow cooking trays 6 stacked in plural stages in a holding part 7 formed in the treating tank 1 to enable the immersion of a food (a) in edible oil and fat and an oil-supplying means detachably placed in the cooking tray 6 and having plural oil-supplying nozzles 14 to quickly fill the cooking tray 6 with hot edible oil and fat at a constant flow rate. An oil-supplying port 10 is formed near the bottom part of the side wall 9 of the cooking tray 6 and the oil-supplying nozzle 14 is inserted into the oil-supplying port 10. An oil-discharging port is formed by removing the nozzle from the port 10. An overflow barrier 11 for the edible oil and fat filled in the cooking tray 6 is formed at the upper part of the side wall 9 opposite to the oil-supplying side.
