<p>PURPOSE:To obtain a wine improved in both alcohol yield and flavor by inoculating Saccharomyces cerevisiae TK-2 (FERM P-13831) into a medium for alcoholic fermentation to conduct alcoholic fermentation. CONSTITUTION:Saccharomyces cerevisiae TK-2 (FERM P-13831) high in proliferation rate, resistant to alcohol and high in glycerol productivity is inoculated into a medium for alcoholic fermentation to conduct alcoholic fermentation, thus the objective wine increased in alcohol concentrations and with relatively high glycerol content is obtained.</p> |
