<p>PURPOSE:To dry a vegetable food, namely root vegetables such as Japanese radish or potato and food material such as Japanese pepper or fruit without deterioration of performance caused by withering, hardening, fading, browning, etc. CONSTITUTION:A vegetable food material, e.g. root vegetable such as Japanese radish or potato or fruit cut into given thinness and fineness is coated with a solution of chitosan or immersed in the solution of chitosan to provide a method for drying a food material. By using the solution of chitosan, conventional defects of withering, etc., are improved and no deterioration in performance of the food material occurs to raise the commercial value of the food material even if high-temperature drying operation is carried out after immersion in the solution of chitosan. By pretreating the food material with alkali ion water before treatment with the solution of chitosan, a drying time is shortened, texture of dried product is softened and green color is retained.</p> |
