The disclosure relates to a method of producing and preparing for distributing cheese of soft/hard consistency, in which method milk prepared for the cheesemaking is concentrated (at A), is supplied with an acidulating agent and coagulant (at B) and is packed (at C) into distribution-ready packages (5) in such a manner that coagulation as well as forming and maturing of the cheese take place substantially entirely within the packages (5). In order to make possible continuous production of the cheese employing existing modern packaging machines without requiring any extensive redesign and modification of such machines, and in order to impart to the produced cheese superior consistency and flavour qualities as well as superior packaging properties so that it may conveniently be removed from its package at the time of consumption, use is made as the above-mentioned acidulating agent of a culture of mesophilic and/or thermophilic bacteria, e.g. DVS or liquid cultures of the redi-set type, or traditionally produced cultures.
