Proposed is a method of preparing pieces of dough for baking, including a fermentative process in which the piece of dough ferments, and a cooling process in which the piece of dough is cooled. The method calls for a first stage in which the piece of dough is stabilized by lowering the ambient temperature to a constant value T1 for a specified time t1 so that the centre of the piece of dough is brought to the same temperature and the dough thus partly fermented. This is followed by a second, cooling, stage in which the ambient temperature T1 is lowered linearly with time within a specified time t2, thus progressively slowing the fermentation process in the dough until it stops completely.
