System for automatic control of the water for washing a vertical centrifuger in which olive oil is cleaned during its manufacture, which comprises a first control device connected to a three-way motorized valve which regulates the cold and hot water to be introduced into the vertical centrifuger, to a device for sensing the temperature of the oil placed before the entry to the centrifuger and to a device for sensing water placed at the exit from the aforesaid valves. A second control device regulates the flow of washing water and is connected to a turbitity metre at the entry of the vertical centrifuger and to a magnetic flow metre via another, additional control device which regulates the passage flow of a two-way motorized valve located before the water inlet to the vertical centrifuger. <IMAGE>
