<p>A m ould with a sliding cover is placed in a sepg. tank filled with whey, and provided with a vessel having a base at least equal in area to the sliding cover and having a large valve opening inwards in the base, the vessel being placed at the free surface of the whey above the sliding cover. When the tank is emptied the wt. of whey still in the vessel exerts pressure on the perforated cover of the tank. The vessel which exerts pressur eon the cheese is pref. provided with a chain or rod to control the valve and a graduated scale to measure the pressure due to the whey.</p> |
