A method and apparatus for processing food products to prepare the food product for packaging. The methods involve presteaming, prewashing. steeping, steam cooking, and then drying the food products. Chemical additives may be added to the food products during processing. The apparatus further includes a conveying means (38), steeping tanks (27), and a water recirculation means (30). A dryer (32) including a rotating barrel adapted for agitation of the food products durin g cooking is present.
