Apparatus for making bakery products rise and for cooking them, comprising a fermentation rack (1) which includes fixed fermentation surfaces (2), an oven with grill (3) and a transfer means (4) for transferring the bakery products towards the said fermentation rack, and then from the said fermentation rack to the said oven with grill, and for next removing the said bakery products from the said oven with grill, the said transfer means comprising a transfer surface (6) which includes the circular conveyor belt (5) and which may be raised or lowered and displaced horizontally in order to be placed in position. The fermentation rack (1) comprises a product-passage hatch (7) which can be opened and closed for each fermentation surface. In addition, the very end (8) of the transfer surface (6) of the transfer means (4) is equipped with a rounded sliding surface around which the said conveyor belt turns when the products are placed on the said transfer surface or are withdrawn therefrom. <IMAGE>
