METHOD FOR PREVENTING DISCOLORATION OF FOLIAGE OF JAPANESE HORSERADISH DUE TO HIGH-TEMPERATURE HEAT STERILIZATION

PURPOSE:To prevent discoloration of foliage of Japanese horseradish due to high-temperature heat sterilization. CONSTITUTION:Stems of Japanese horseradish are immersed in tea and further vacuum-packed and subjected to retort treatment to provide a retort pouch product. Effect of preventing discoloration is enhanced by adding sorbitol thereto.
