PURPOSE:To cut off the tendon from the white meat of poultry by supplying a white meat having tendon on a table directing the tendon-side downward, clamping the tendon between the circumferential edge of a rotary disk and a circulating clamping chain and transferring the meat to the position of a knife. CONSTITUTION:A white meat (a) of poultry having a tendon (a1) is supplied on a table 2 directing the tendon-side downward and transferred by clamping the tendon between the circumferential edge of a rotary disk 3 and a circulating clamping chain 4 moving along the circumferential edge. The tendon is cut off from the white meat with a knife 6 placed near the top of the rotary disk and close to the tapered face.
