The invention relates to a machine for peeling a piece of flesh at least partially covered with a skin, comprising a blade (3), the cutting edge of which extends parallel to one generatrix of a pulling roller (4) which, having a high coefficient of adherence, drags the piece to be peeled towards this blade so that the skin (15) is progressively detached from the piece and passes through the gap between the blade and the roller while the piece continues to advance over the blade until the skin has been completely detached. In order to increase the pulling power of the drive roller, this machine, downstream of the cutting edge of the blade (3), has a means (5), termed pressing means, which presses against the drive roller (4) that part of the skin which has just been detached from the piece of flesh, thus increasing the surface area in engagement with the roller and thereby the adherence of the skin thereto, this pressing means (5) being, via a means (7), termed application means, positioned at a predetermined distance from the drive roller and urged towards it with an adjustable force (F) generated by a driving member (8). <IMAGE>
