The invention relates to a process for the thermal treatment of beer, in which a beer stream, before its packaging, in the direction of treatment undergoes heating to pasteurisation temperature, hot-holding at the pasteurisation temperature, cooling below filling temperature and heating to filling temperature. The invention is intended to ensure technical simplification of the arrangement previously necessary to carry out the known process. This is achieved in terms of the process by branching off a part-stream from the stream to be cooled to set the volume of the beer flowing off at the filling temperature and adding the part-stream to the stream cooled below the filling temperature.
