The present invention is related to any manufacture industry wherein a quality control through sensory evaluation is required. More particularly the invention refers to a process for training assessors in a panel for evaluating the products of an industry. The inventive system is advantageous in that the evaluation is standardised, allowing a proper operation of the sensory panel to be ensured by well defined and quantifiable criteria; the system is equivalent to physicochemical or microbiological quality control systems; it reduces the training time of new staff in the panel, standardising their evaluation criterion and homologising the participants criteria so that the grade given to a particular sample depends on the sensory characteristics thereof and not on the participants. The process is characterised in that it comprises the following steps: a) Diagnostic; b) establishing the variation ranges; c) developing the acceptance and rejection criteria, and establishing the sensory sp ecifications; d) training; e) monitoring performance; g) implementing a methodology and f) action guidelines.
