PURPOSE:To obtain the title cream having a stable color tone, excellent flavor and texture by blending a mixture comprising peanut butter, etc., and shortening, etc., with an emulsifying agent such as propylene glycol fatty acid ester, etc. CONSTITUTION:In producing an aeration cream capable of being distributed and sold at normal temperature by blending one or more selected from peanut butter, chocolate, unts, powdery fruit juice and powdery fruit as a main raw material with shortening, creaming powder, powdery saccharide, etc., the raw material is mixed with two or more emulsifying agents selected from a group consisting of preferably 0.1-3wt.% propylene glycol fatty acid ester, preferably 0.1-3wt.% polyglycerol fatty acid ester and preferably 0.1-1wt.% monoglycerol fatty acid ester to give the objective cream. |
