发明名称 PREPARATION OF DRY INSTANT GRUEL
摘要 PURPOSE:To provide a dry instant gruel produced by vacuum lyophilization treatment, having excellent reconstitution property, free from collapse of the rice grain and exhibiting excellent taste, flavor and palatability. CONSTITUTION:Polished or unpolished rice is mixed with 0.05-0.5wt.% (based on the raw material) of a protease and 1-5 pts.wt. (based on 1 pt.wt. of the raw material) of water or hot water and the mixture is maintained at 40-50 deg.C for 0.5-4hr. The treated mixture is incorporated with 4-10 pts.wt. (based on 1 pt.wt. of the raw material) of water or hot water, temporarily boiled and heated at 90-98 deg.C for 15-40min. The obtained gruel is lyophilized in vacuum and the grain size is adjusted to 5-10mm, preferably 8mm to obtain the objective dry instant gruel.
