The preparation method for the slender, white rice-cake (I) which can be boiled for 30-50 sec. instantly in boiling water is pre-treated rice flour (II) 30-35 % and non-treated rice flour (III) 65-70 %. The preparation method of (II) includes the steps of: (1) washing the rice; (2) soaking the washed rice for 1.5-2 hr; (3) dehyrating; (4) cooking with steam; (5) drying and grinding to have 12-15 % water content. The normal (I) which is made of 100% (III) is prepared by 5-7 min boiling. |
