PURPOSE:To obtain a readily drinkable an healthy beverage food composed of a fish body ingredient having a high nutritive value without any fishy smell. CONSTITUTION:This healthy beverage food is obtained by adding an edible organic acid in an amount of 2.0-2.6wt.% based on the weight of the fish body composed of fresh fishes and shellfishes thereto in a hermetically scaled container, keeping the resultant mixture at ambient temperature, hydrolyzing and liquefying the fish body, providing a hydrolyzate liquid, separating the hydrolyzate liquid, affording an aqueous solution of the fish body ingredient, adding rice KOJI (yeast) to the aqueous solution of the fish body ingredient, keeping the obtained mixture at 40-50 deg.C and treating the mixture for 15-20hr. Thereby, a moderate acid taste due to that of the edible organic acid without any fishy smell at all is obtained. The deacidifying treatment is not required without making a drinker feel the presence of the fish body ingredient at all. The beverage is readily drinkable and well naturally balanced and has a high nutritive value. |
