PURPOSE:To obtain a new compound capable of relieving constipation, exhibiting an excellent effect on storage stability, preservability and denaturation of a protein, and inhibition of dental caries and useful as a diet, a medicine, etc. CONSTITUTION:A compound of the formula [(n) is 0 to 3], e.g. O-beta-O- Fru-(2 6)-alpha-O-D-Glu-(1 1)-alpha-D-Glucopyranoside. In addition, the compound of the formula can be produced through a transfructosylation reaction by allowing the cell body of a microorganism [e.g. strain IAM 2544 (the stipulation number in the Institute of Applied Microbiology, University of Tokyo)] belonging to the genus Aspergillus and having a fructose productivity or this enzyme prepared thereform to act on a substrate containing sucrose and trehalose (the mixture ratio is preferably 1/1 to 1/6 on weight base). |
