摘要 PURPOSE:To obtain both methods for effective sterilization of a sprout vegetable seed and cultivating of the sprout vegetable in which the growth is promoted while suppressing the occurrence of putrefaction due to the propagation of microorganisms. CONSTITUTION:Sterilizing treatment for exposing a seed of a sprout vegetable to a high temperature of >=70 deg.C in a short time and then quenching the resultant seed is carried out. Thereby, the seed capable of remarkably reducing the putrefaction due to the propagation of microorganisms caused in a growth process of the sprout vegetable without adversely affecting the germination and growth of the sprout vegetable at all can be obtained by reducing the exposure time in spite of the high temperature of 70 deg.C. Furthermore, this method for cultivating the sprout vegetable is to use the seed, exposed to the high temperature of >=70 deg.C and then quenched. The seed after the high-temperature sterilizing treatment is capable of rearing the sprout vegetable after passing through dipping with a small extent of putrefaction. As a result, the sprout vegetable good in keeping quality can be harvested.
