PURPOSE:To produce the subject compound useful as an optical resolution agent, an intermediate for pharmaceuticals and agrichemicals, etc., in high efficiency by reacting racemic mandelic acid with a microorganism capable of asymmetrically metabolizing the (S)-isomer, adding a yeast to the reaction liquid and reducing the produced benzoylformic acid. CONSTITUTION:(R)-mandelic acid useful as an acidic optical resolution agent, a side-chain modifying agent for cephalosporin antibiotic substance, etc., is produced by treating a mixture of (R)-mandelic acid and (S)-mandelic acid with a microorganism capable of asymmetrically metabolizing (S)-mandelic acid and belonging to the genus Alcaligenes, Achromobacter, Flavobacterium, Micrococcus, Paracoccus, Proteus, Pseudomonas, etc., or processed product of the microbial cell, adding a yeast belonging to the genus Saccharomyces, Candida, Rhodotorula, etc., to the reaction liquid containing residual (R)-mandelic acid and benzoylformic acid, continuing the reaction to reduce the benzoylformic acid into (R)-mandelic acid to increase the content of the (R)-mandelic acid in the liquid and separating the acid from the liquid. |
