PURPOSE:To prepare remarkably tasty fermented soybean free from odor of fermented soybean whose improvement is desired by many people by adding and mixing an inosinic acid salt or (and) guanylic acid salt or (and) a glutamic acid salt in fermenting. CONSTITUTION:A fermented soybean filled in a container is produced by aging a water-containing soybean, attaching Bacillus natto thereto, then charging the bacterium-attached soybean in a container and fermenting the bacterium. In the production thereof, an inosic acid salt or (and) guanylic acid salt or (and) glutamic acid salt is added and mixed therewith during arbitrary process before charging into the container. |
