A process for the prepn. of pickled cabbage or other fermented vegetables in strip form includes a stage in which the strips of vegetable are oriented in parallel. Orientation in parallel takes place before packing, and is by combing, opt. combined with elimination of waste material, which may be intruduced again after cutting into strips. ADVANTAGE - Prepn. and storage are facilitated, and the appearance of the prod. is better. Containers can be filled more completely, for use, the prod. may be presented in different forms, e.g. nests, woven together or as pyramids. Combining into parallel form removes ribs, leaf residues, and uncut pieces. Pieces of the stump, rich in vitamins, improve the quality of the prod.. |
