PURPOSE:To easily obtain at a low cost the title food good in eating feel and having a wide range of applications by such processes that fish body is heated with e.g. steam and denatured, its flesh is collected and coarsely ground, the fine bones contained are removed, and the resultant flesh is dehydrated and then incorporated with a quality improver comprising saccharide. CONSTITUTION:Fish body of e.g. Alaska pollack is heated by steam or hot water and denatured, its flesh is collected, coarsely ground and, if needed, put to hydro-extraction. The fine bones contained are then removed and the resultant flesh is dehydrated and then incorporated with a quality improver prepared by formulating (A) pref. 100 pts.wt. of a saccharide and/or sugar alcohol with (B) 10-100 pts.wt. of at least one kind of ingredient selected from common salt, seasonings and polymerized phosphates, followed by, if needed, forming and/or freezing, thus obtaining the objective food. |
