摘要 <p>PURPOSE:To grow highly alcohol-resistant mutant from Japanese rice wine yeasts and to obtain Japanese rice wine stably by using the mutant yeast strain separated. CONSTITUTION:From mutants of Japanese rice wine yeasts resistant against an imidazole-based ergosterol biosynthesis inhibitor, an alcohol-resistant strain is further separated in high frequency. Using this strain, Japanese rice wine is produced stably so as not to extend filtration days due to decline in the fermentability in the closing days for the filtration and not to deteriorate the quality of the Japanese wine involved therein.</p>
