PURPOSE:To obtain a mutagen removing agent in food or in a form similar to food. CONSTITUTION:An alcohol fermentation product of fruit is mixed with the whole or part of a vegetable material of herb plant or its powder, extracted material, ground material or dried material. Preferably target foods include sauce for roast meat, cooking SAKE (rice wine), sauce, ketchup, dressing, etc. The alcohol fermentation product of fruit extremely inhibits mutation action of carcinogenic substance such as Trp-P-1 or Trp-P-2 and of mutagen such as MNNG on microorganisms. |
