PURPOSE:To provide a food boiled in MISO (fermented bean paste) having excellent chewability and deliciousness and usable as a substitute for MISO- DOTE (a local Japanese food cooked with MISO) and provide a process for the preparation of the food. CONSTITUTION:KONJAK (jelly made from the starch of devil's tongue) is added to sinewy beef used for imparting chewiness and beef used for imparting deliciousness and the mixture is seasoned by boiling in a seasoning liquid produced by mixing MISO, sugar, SHOCHU (low-class distilled spirits), garlic and water. |
