PURPOSE:To obtain a method for pregelatinizing raw starch while keeping the particle shape of the raw starch and providing alpha-starch of good quality even under ordinary pressure. CONSTITUTION:Raw starch is heated and pregelatinized in the presence of an alkali in a mixed solvent of water with an organic solvent compatible therewith. |
