PURPOSE:To provide a method for selectively counting heat-resistant Bacillus coagulans spore cells. CONSTITUTION:A raw material for a processed food is cultured in an m-TAA medium containing phyton and adjusted to pH 4 to 5, preferably pH 4.6 and its sampled solution is heat-treated in a boiling water for 30 min. After cooling, it is cultured on a poured plate medium at 55 deg.C for 5 days and the number of the formed colonies of the heat-resistant Bacillus coagulans spore cells are measured. According to this method, the number of the formed colonies of the heat-resistant Bacillus coagulans spore cells can be measured and the contamination of the raw material for the processed food with the heat-resistant Bacillus coagulans spore cells can accurately be grasped. |
