摘要 A number of dough shapes (2) are marked with a pattern in a procedure in which the pressure or cutting elements (6) are moved with an essentially constant speed. The novel feature is that movement of pressure/cutting elements is interrupted during operation, and this interruption lasts for longer period than that normally associated with reverse movement of marking elements. Also claimed is a device for carrying out this procedure, with a control unit (12) which controls the speed of the drive (11) which moves the marking elements. The interruption of movement may be in the form of a reduction of the speed of the elements to a lesser constant value, or the elements may be brought to a stop for a certain period of time, pref. between 0.5 and 4 seconds. The control allows the movement of the elements to be stopped for a selected time period (15) when the elements (6) are near the dough support plate (1), and in particular when they are engaged in the dough shapes (2). The mechanism consists of an eccentric operated by an electric motor controlled by switch and a timer. The switch may be in the form of a relay or an electronic switch. USE/ADVANTAGE - Used for marking, e.g. bread rolls with a pattern to improve their appearance and taste. Marking is successively performed independently of the baking process involved and of the natural variability of the dough, without the need for any adjustments of the marking procedure or of the mode of operation of the baking system.
