PURPOSE:To obtain Japanese deep-fat dried food having good appearance, dry touch, texture, decoration and crispy feeling without requiring a professional skill by using a Japanese deep-fat dried food powder composition comprising wheat flour and a component except wheat flour in a specific ratio. CONSTITUTION:A Japanese deep-fat dried food powder composition comprises (A) 60-95wt.% wheat flour and (B) 5-40wt.% component except wheat flour, composed of one or more of sugar alcohol, egg white, lecithin and paste. The composition is used as a coating material to give Japanese deep-fat dried foods. |
