PURPOSE:To obtain the yeast massively producing and accumulating glutathione in its body by subjecting a glutathione production ability-increased yeast to a mutational treatment and subsequently aerobically culturing the produced azaserine-resistant strain, the glutathione production ability-increased yeast being produced by the introduction of a gene. CONSTITUTION:A highly glutathione-producing yeast [preferably Saccharomyces.cerevisiae YHT178 strain (FERM P-13012)] produced by introducing a gamma-glutamylcysteine-synthesizing enzyme gene into an yeast is first subjected to a mutational treatment, and the produced azaserine-resistant strain is aerobically cultured to provide the objective yeast producing glutathione in a remarkable amount in its body. When a yeast having a higher glutathione content is further desired, the azaserine-resistant strain is preferably subjected to a conjugation treatment or cell-fusion treatment. The objective yeast includes Saccharomyces.cerevisiae 62D strain (FERN P-13010) obtained from the YHT 178 strain. |
