PURPOSE:To provide a method for producing a shrimp food, capable of ready and rapid solidification processing by using as the raw material the head and chest parts which have been disposed of. CONSTITUTION:The body part of a shrimp is removed and the residual head and chest parts are crushed and ground. Juice is separated from shells and lees and the separated juice is heated and solidified without any modification. According to this processing, a shrimp food having a high market value can be produced through simple processes without loosing flavor and gloss essential to the shrimp by excessive heating. In addition, this method enables effective utilization of resources since the head and chest parts which have been disposed of are used. |
