摘要 PURPOSE:To produce a delicious cuttlefish entrails source useful as a health food by adding cuttlefish entrails without removing sepia to a boiling seasoning liquid, boiling it and subsequently separating oily components in the supernatant. CONSTITUTION:Feet, together with entrails, are initially separated from the body part of a cuttlefish and the entrails are then separated from the feet without removing sepia. The above-mentioned entrails are subsequently added to a boiling seasoning liquid and boiled with stirring so as to obtain a boiled soup. After allowing the obtained boiled soup to stand overnight, oily components separated on the upper part are gently removed and the residual boiled soup is stirred, thus producing the objective cuttlefish entrails source. In addition, the seasoning liquid can be obtained, e.g. by adding kelp, skipjack and SHIITAKE (kind of fungus, A. Lentinus) to a regularly brewed soy source, adding a primary stock of kelp, skipjack, etc., and its secondary atock to the resultant kelp soy source, subsequently adding sugar, MIRIN (kind of seasoning) and Japanese rice wine to the obtained kelp soy source, further adding raw ginger and lemon juice thereto and sufficiently boiling it.
