<p>PURPOSE:To obtain a producing method of pickled radish or pickled vegetable having freshness of vegetable and sweetness characteristic of fresh vegetable and capable of producing in extremely short time. CONSTITUTION:Fresh radish or fresh vegetable collected from a grown field is put in a pressure vessel and immersed in a salt water having arbitrary concentration and simultaneously the interior of the vessel is pressurized to 5-8 atomic pressure and retained for required time such as for 60-100min and salt content is infiltrated into the fresh radish or fresh vegetable to afford salted radish or salted vegetable, which is then prepared as the objective pickled radish or pickled vegetable.</p> |
