PURPOSE:To deodorize the offensive odor given from meat such as beef, pork or fowl, and to deodorize the odor unique to each of such meat without impairing the palate. CONSTITUTION:In deodorizing meat, 0.5-20wt.%, based on the meat, of powdery or liquid sardine flesh-derived peptide is added to such meat in a raw state. |
