A dry, non-caking substantially non- hygroscopic honey-milk product composition comprises 10-75% by weight of honey solids and 25-90% by weight of milk product solids. The composition has a moisture content of not more than 2% by weight and does not include a dessicant. The milk product may be whole milk, cream, skim milk, buttermilk, whey or mixtures thereof. The composition may comprise butylated hydroxyanisole butylated hydroxytoluene, tocopherols, citric acid, n-propyl gallate and vitamin D. The composition may be made by mixing, e.g. at elevated temperature, the honey with a dried or fresh milk product and adding water if necessary, to form an aqueous solution and drying the solution e.g. by freeze, spray, drum, tunnel, vacuum evaporation, crystallization or foam drying methods. The composition may be used to coat cereals or used with confectionery products, cake mixes, cookie mixes, cocoa mixes, coffee mixes, tea mixes, instant puddings, pie fillings, chocolate drinks, cherry and strawberry milkshakes, peanut butter and ice-cream. |
