An appts. for blanching, defrosting and cooking of products in steam, comprises a heated rotating cylindrical vessel (1) with entry (21) and exit (22) channels and a helical agitator. Heating is via a double envelope (2) with longitudinal compartments associated with a rotating steam generator (3) supplying only those lower compartments (4) directly in contact with the products. The agitator comprises a spiral blade extending the length of the vessel with external surface (6) sealed to the internal vessel wall and the internal surface (7) at a distance from the central axle (8) and defining the compartments. Radial connections (9) are fixed to the central shaft (8) between the walls of the compartments. Steam generator (3) comprises fixed vapour entry (10) connected sequentially to certain of the channels of the peripheral mobile vapour supply (11), and fixed vapour return system (12) connected to mobile central return system (13). A fixed section supports the pipes (10,12) for supply and return of vapour which is itself supported on either side by two mobile sections, via two low friction joints, pref. graphite. One of the mobile sections supports the other pipes (11,13,14)). ADVANTAGE - Progressive heating as product travels through vessel resulting in no adverse effects on organoleptic qualities.
